All-weather Crepes

this is my favorite recipe by far. We have these crepes at least once a week – usually Sunday mornings for breakfast. But its really all-weather: breakfast, lunch, dinner, dessert…. you just change the filling and you’re good to go.

Its also super easy to make, with very basic ingredients so how can you not love it?

Ingredients:

  • 1 cup all purpose flour
  • 1 cup milk and just a bit more (we want the batter to be fluid but not runny)
  • 1 tablespoon butter (and just a bit less if you’re on diet)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • a pinch of cinnamon (to taste)

First things first: melt the butter! Add the rest of the ingredients in a food processor and finally add the melted butter as well 🙂 Mix it until you have a nice batter. In the meantime, heat up a non-stick frying pan. Pour a bit of the batter in until you have this nice golden colour from one side (its will only take a couple of minutes — see below). Then turn it over for another couple of minutes and that’s about it. Easiest recipe ever!

What goes well with it?

Almost everything. Here are few that we love:

  1. A mixture of tahini, honey and a bit of cinnamon
  2. Hazelnut cocoa spread and crumbled butter biscuits (yum!)
  3. Banana slices with maple syrup
  4. Omelette (that’s right, you use the crepe as a wrap for the omelette)
  5. Ice-cream and chocolate syrup
